Root Vegetable Stew

Ingredients

2 carrots sliced

1 medium potato diced

1/2 Suede diced

1 Leek sliced

4 oz Pearl Barley

1 240g can chopped tomatoes

Chopped fresh Rosemary

Salt and pepper

Place everything into a slow cooker and top with freshly boiled water. Cook on low for 8-10 hours. Or alternatively place everything in a large stock pot or saucepan and boil for 25 minutes. Serves 4.

This really is a one pot dish. Which was highly recommended by the Ministry of Food during World War 2 as it helped save on fuel.
